We would like to solve the problem of continuing to sell out even though we have used several methods to set up sales even when there is no stock.

Have you tried to enable continue selling when out of stock option? It is located under the Shopify Admin → Product → Variant page.

Hi, I was trying to that way, once I clicked variations it changed as “sold out” too still not working.

You can choose to continue selling when out of stock on your store if you wish - let me walk you through how I would do this.
From my store’s admin, go to Products > Inventory. I would then select all the products I want to apply this to by checking the box on the left-hand side. Then click “edit variants” - from here, click on the columns button at the top. Select the column called “Continue selling when out of stock” - toggle this switch on or off to apply or remove this feature to the particular products. Be sure to click “save” before exiting to apply this change! Here is how it appears for me:
