When I check my site for mobile in the designer, the All Products and Collections is not right. It looks like this:
but when I check my phone, it looks like this. There is no space and they are not stacked as in the designer. Am I not seeing the mobile version on mobile? Do I have to turn something on somewhere?

That happens because the width of the Shopify Editor is different from that of an iPhone. The editor is just simulating a smaller screen size, so you’ve a general understanding of how your site will look on smaller screens. It is not simulating an iPhone nor other phones.
What you’re experiencing is normal.
