I have multiple stores that use a Delivery Date/Time Picker at the Cart before they proceed to checkout. I have experimented with multiple apps like Supertime and Buunto Time Picker. When customers complete their purchase, the delivery time is included as additional details on the order page.
The problem is that we need a minimum preparation time for orders, which is a setting available in the aforementioned apps. However, about 5% of the time, the customer sits in the checkout page for multiple hours, meaning the original date/time they selected on the cart page may provide less than our required 3 hours for preparation, or sometimes even in the past.
Removing Abandoned Cart emails was a suggestion that Shopify support provided, and the Buunto app developers said that this is a Shopify problem and it is out of their hands. However, this doesn’t stop customers from leaving their computers for hours during the checkout process.
Thus, I am posting this to see if anybody else is experiencing this issue, and if they have any way of solving it. One idea would be to force an expiry for the checkout page to ensure that nobody sits there for more than an hour, but I’m not sure if that’s possible.

P.S. The attached image shows somebody who would have started the checkout process before 11 AM, when the earliest delivery time would have been 2 PM - 3 PM. Then they waited until 12:14 PM to complete checkout, while the original time selected is retained.
