Situation: I am currently using a payment gateway from another site and implementing it to a NFT on the Text Columns with Images. This is done by adding a specific URL on the button link.
Ideally: I would like to not depend on adding a specific URL per image. Instead, would it be possible to add a specific URL per product on Shopify debut theme? (Currently, the products on the collection pages are only used for viewing)
May I ask if how did you create NFT through shopify?
Based on my understanding seems like you have NFT as a product in shopify then you have problem linking the Item with PG for checkout, I am still curious about how I can create NFT product with shopify. Your response will be a big help!

I did not use Shopify to create a NFT. I used “pro nft-maker”. Once you set up all the metadata in your collection (which is a whole different conversation), they provide a URL.
On my landing page (Debut Theme), I used the section, “Text Column with Images”. In which I would manually add the image and a payment gateway URL (which is provided by pro nft maker).
Hence, I used Shopify to display and pro-nft maker as a payment gateway API. In the near future, I would like to use the cart feature on Shopify and not manually add every NFT with its own specific URL.

I wouldn’t recommend doing this. It would be difficult to scale with this kind of layout.
However, it get the job done as a minimum viable product.
