Am I correct in thinking that there is no point in the signup process for the New Customer Accounts where the customer is asked for a name? I had been using the classic accounts because I had some liquid customizations on the pages. I no longer need those customizations and like the idea of self-service returns, but I was surprised to see that customers can add an account without ever entering a name.
Am I overlooking something or is that just how it works?

You are correct: all that is needed to register with “new customer accounts” is an email address.
If you want to make sure to collect more information from customers up front, I would definitely recommend sticking with class accounts for now.
Otherwise, the customer information will still be collected at checkout. Or you could also use an app such as Helium Customer Fields to provide an “edit account form” where logged in customers can update/edit their account information.
