Hi! If delete products that we will no longer be offering will it affect reporting? i want to make sure YTD and future reporting stay accurate when looking at sales and inventory.

The reports in your Shopify admin capture the details of an order at the time of the sale. Because orders will remain to exist despite products being deleted, the products will still show in your reports, and the sales history of those deleted products will remain.
The case is similar with edited products. If you make changes to product details, such as the name or product type, the old version will remain in reports; however, the new version will also appear in your reports. Hey its 2022 and wanted to notify others that the answer is partly correct. While the ui reports will not be affected, the data from the api will have discrepancies. At the moment deleted variants wont be returned with the order data and line item cost.

Shopify confirms this
Deleted objects are not available in the API. The product variant ID is the only detail you can get when a product variant is deleted. Other details are not available.
