I’m thinking about reverting my site/code to 15 month old version. I would use the same theme (Brooklyn) but simply an earlier version.
Is it possible to do this and not affect seo as many of the pages and products have been aded over the past 6 months.

In general if you made no SEO based changes to your themes code you may be fine, though this doesn’t count updates to the theme itself from shopify or apps.
Your theme is separate from content data such as products, pages rich text editor content, etc.
Though a theme is designed to service and present that data & content in different ways.
If you’ve made ANY modifications to your theme codes , or used an app that did, then a full rollback may not be good as your theme could contain logic that presents data in certain ways that SEO crawlers consume.
Your healthiest course is to review the code of both versions of the theme and find any differences that are meant for SEO and transfer those changes.
Or pursue the rollback and monitor your SEO for any negative changes and undo the rollback if so.
