But I want it to look like this - so the options are shown to the right.

Currently the default for Dawn is that the dropdown menu opens vertically like in the first screenshot you shared. Also, the main menu item must be clicked for the dropdown menu to expand. I reviewed some of the menu customization settings in the theme editor and it isn’t currently possible to make the dropdown menu expand when it’s hovered over or have the menu items open to the right using the Dawn theme. That being said, this may be possible with some custom coding or third party apps.
You can review the available menu customization settings by going to Online store > Themes > Customize (next to the theme you are working with). Once there, click the Header section and you will see your menu settings there.
If you’d still like to edit your menu beyond this, you should be able to through custom coding. To do this I would recommend hiring a Shopify Expert to help you. You can hire one on this page. You can also learn more about Shopify Experts here.
Another option is to look into some third party apps. I’ve included a few popular menu apps below, but you can find more menu apps on this page as well.
