In our circumstance, we frequently have customers call after placing the order to change an option. We are using an app for product options (we sell custom items that have 5-6 option menus). If you create or add an item to an order in the shopfy admin, it only shows the product option menus that are built within shopify. As a result, If a customer calls to make a minor change, we have to cancel the order and start over with a new order so that we can build the order on the public website so that all options are included in the order.

It would just save us a ton of time if the order could be edited in an easier way.

Unfortunately Shopify does not allow you to directly edit line item properties or third-party app option values once the order has been placed. The editable fields in the “Edit Order” screen only apply to Shopify’s native product variants. Any custom options added via apps are stored as line item properties, and Shopify locks those after checkout.
