It is great to see that it is now possible to edit metafields directly through the product and variant admin instead of having to use an admin app. However, I can’t see how to edit the variant metafields when the product only has a single variant. Only the product’s metafields are available to edit, and there is no way to click through to edit the variant on single-variant products. Am I missing something?

No. Unless I’m missing something obvious, this isn’t currently possible. Seems like something Shopify needs to fix.
Yeah I’ve talked to shopify support and they said it will be fixed in their next update. Hope to see it soon as we can add more product options with that and with more product options there will be more options in filters in shopify 2.0

Just go to the product admin, then edit variants and you will see the same fields at the bottom of each variant.
