was looking for the same thing and there is actually a work-around. All you need to do is to create a custom shipping profile for the item you want exempt from free shipping. Settings > Shipping and Delivery > Create new profile > Add only that specific product to the profile and its rate..

You can’t add digital products to a shipping profile. If you don’t check the box that an item requires shipment it can’t be on a profile.
