We need to exempt one shopping cart item from free shipping. Currently we offer free shipping on all orders over 75.00. We do have one item that we would like to exempt from that. Can we make it work?

You need to create a custom shipping profile for the item you want exempt from free shipping. You can do so by going into Settings > Shipping and Delivery > Create new profile.
You can setup different shipping rates for the products in this profile. Do not include your free shipping rate here.
