Welcome to the community, but sorry to hear about your case. There are too many fake/scam stores that pop out almost every day.
That shop disappeared most likely because it was reported on
https://www.shopify.com/legal/tools/report-an-issue/report-a-merchant
and Shopify closed it. You can try under Fraud and fill details.
You should first try with your bank to stop the transaction, but it is most likely a long shot. And no, Shopify is not liable, and you will not get money back from them. And I really think they should do something on their side to protect customers of stores where owners are scamming everyone.
