I have no idea why the Fulfillment location shows a completely unknown address in the stores shipping settings. And if I try to edit it, it deletes all shipping rates I spent a long time to put together.
I don’t know what this location is, why it is added, it doesn’t match the store address at all in any other place in the store or settings.

This usually happens when a default fulfillment location was auto-created by Shopify (often during setup, app install, or markets setup).
Don’t edit it directly. Instead:
Go to Settings → Locations and check which location is marked as default.
Update the address there, not from Shipping.
Once corrected, reassign that location to your shipping profiles.
Editing the address from the shipping profile is what wipes the rates.
