Google is telling me I need MPNs or GTINs for my products or they will not be listed in searches. I make all of my products myself so there is no one else to ask for those.
How do I create unique MPNs for my own products? I can only find answers that send me in circles back to ‘the manufacturer’.
The basic shopping app, which I’m guessing you are using, is not able to setup custom products. So you have two ways of fixing it.
The easy way is to use an app that is built better and has the ability to submit accurate product identifiers: https://apps.shopify.com/multiple-google-shopping-feeds
Or you can setup feed rules in Google Merchant Center to clear brand and mpn values, and set identifier exists to the value no.

If you manufacture your own products and you have neither MPN nor GTINs, then you need to set the product identifier = false in Merchant Center feed rules to resolve the issue. You can watch this YouTube video that has a step-by-step tutorial to guide you through the changes so you can resolve the missing unique identifier issue and get your account approved.
