Hi on the website peakbikestation.co.uk we want to be able for customers to be able to hire a product. We have through an app sorted all the links and payments. But on Google Merchant centre how to we represent what this product is for hire and not for purchase or shipping.

Historicallly products for hire or rent, have not been allowed on Google Shopping. Now the issue is that Google does not mention anything specifically about it. Which means you may or may not get suspended. Because it was historically not allowed, I would be careful about proceeding.
Google Shopping is designed for purchasing an item. Not rental.
