When I google my website, the information below the URL is in default. I don’t what its called.
What is it called? And,
How do I edit it?

I can help you with this! That is referred to as a “Meta Description” and can be found within your store admin under Online Store > Preferences.
You can update the meta description in there and once Google recrawls your site it will update. While there is no way to ensure that Google recrawls the new info ASAP, you can resubmit your sitemap to them to encourage that.
If you have not submitted your sitemap previously, then now is the perfect time! You can follow the steps in our Help Center to do so: Finding and submitting your sitemap · Shopify Help Center.

It is a “meta description”.

The meta description can be updated once Google recrawls the site. My problem was that I got the site verified but didn’t submit a sitemap.
I’ve read that it doesn’t happen instantly for the site to be crawled. How long does it take usually?
