We have a product with different variants. Each variant has it’s own product image with icon and text on the image. Issue is that Google Shopping will not approve the main images with icon/text on it. How can we update the image on the feed without changing the image on the website?

You need to submit a supplement feed.
A Google Sheet file, with two columns, the id (matching the id value in the primary file) and an image_link column.
You could first download your file: https://feedarmy.com/kb/download-a-copy-of-your-data-feed-from-google-merchant/
Then delete all columns except id and image link.
Then copy the data in a Google Sheet.
Edit your image URLs
Connect the supplement feed.

Yes that’s what I did before but it was a lot of work. I used the app ShoppingFeeder that allowed me to change the variant image in bulk on the feed and not on the website.
I basically have an image that has a better CTR for Google Shopping ads but I want them to see another image once they click and visit my website. Does this supplemental feed method work for my use case? Or will the supplemental feed update the image_link attribute, so that both the Google Shopping ad image and the image they see when they click to my website are the same? Thanks!
Only 1 main image can be submitted, and this image will be visible in the shopping ads or free listings.
Any additional images, may be visible if after clicking the first time the ad expands to more info. Meaning if you are still on google.com
If the click leads to your website opening, then what you show on your site will be visible.
You can change main images and additional images using supplement feeds yes. Or you can also use a data feed app, that allows you to manage everything in Shopify.
For example submit a different URL for the variant images / main images.
