Hello Arcs, great question, that is indeed worth listing on Google Shopping. Do note that the market is flooded with coffee, so make sure that you setup an advanced strategy in Google Ads.
For example, maybe focus first on getting traffic on relevant searches. Meaning, if you sell dark roast, try targeting it first. Traffic will be lower, but you will get higher CTR and higher potential sales.

Now your talking about local searches, so maybe I misunderstood what you meant by coffee, if you meant a drink, and not the beans, then you have to be a bit careful.
Google shopping both national and local is only for physical products that are readily available prior to a consumer making a purchase. Meaning if you have to make the coffee after there is a purchase that this is not allowed on Google Shopping, as per the policy here: https://support.google.com/merchants/answer/6150127#:~:text=Unavailable%20offers
But if you sell beans for example, or drinks that are bottled and prepared, like cold brew. Then you can use Google Shopping.
However I have found local listings a bit difficult to deal with, because tracking conversions is very difficult. I had a client, which I still work for, but years ago we enabled local listings, and for every 15 walk ins, we had maybe 135 conversions in Google Ads. Making tracking impossible to be accurate. So based on this, we just disabled local ads, and focused on shopping ads nationally instead.
But I always tell everyone, do test it out, every situation is different. Because maybe with local ads in your case, you get a lot more walk ins buying your goods. So test if for a few months.

No coffee beverages or anything like that. Just beans. What I have in mind is to have my offerings (bagged coffee for example) show up on the google search when local people search for “coffee“ “beans“ “cafe“ “coffee shop“ even though I don’t have a retail location yet.
I would try to aim for national sales, rather than local. You will get a lot more results that way. Just follow the advanced campaign structure to avoid wasting to much budget.
But if you do want to use local only, Google shopping is available for local listings.
