Shopify only allows 100 variants, which is unfortunately not enough for us and we needed to add 1 more variant. However, is there a way where we can make the custom dropdown selection look alike as Dawn’s theme variants buttons?

There is not native solution under any Shopify Plan that allows you to add more variants than 100 for a product.

You can try splitting variants into separate products which are similar but have a minutely different name. The workarounds have been brilliantly written in this document:
