I appreciate that you have included an image of the product you are referring to. Could you share the URL to your store as well as what theme you are using? By default, you can manually change the stock of the product to not allow your customers to purchase the Not for sale product. However, this will not display a notice on the products thumbnail that it is Not for sale - instead it will display a notice Sold Out.
Since typically merchants want to advertise and encourage a purchase when it comes to products, our options may be a bit limited. We can look towards using a third-party application that can assist with making the product unavailable but still visible on the online store. I found some recommendations that you may be interested in, feel free to take a look:
Alternatively, since the applications are more designed around products “coming soon” rather than “not for sale”, you can reach out to a Shopify Expert if you are interested in hiring a developer to make the change for you.
