I don’t want to pause or close my store. I just want to add a note on the front page, or checkout page, that says I’ll be gone for two weeks and will fulfill orders when I get back.

Yes, this is possible. you can add the note on the checkout thank you page. or also you can add an annocementbar to the website to say words like on vacation.
Where do you like to display it? Also, share the URL of your store.

It’s just above the header section and you can display it on every page till the cart.

Which theme you are using for your store? All themes have a section called the announcement bar just top of the header.
customize your theme and check you can also find the option for this. Please check the attached screenshot of the dawn theme.

As others have mentioned, an announcement bar would likely be the best way to deliver this information. Having the announcement at the top of the page makes it immediately visible to anyone who visits the site and it can easily be disabled once you return.
Most themes come with an announcement bar by default that can be enabled within the theme editor. Please check your theme and see if you have this, but let me know if you need help. There are also a variety of third-party apps that allow you to add an announcement bar to your website if you’re looking for an alternative with extra features.

Got it, though it seems like I should be able to customize the color of the bar and the text, but I’m just getting white text on black bar…I think my theme is just called “Simple”

I believe you should be able to edit the colours of the bar in the “Theme settings” section. Please give this a try and let me know if you are able to change the colours.
