That is a great question! You can add a favicon to your online store to allow the image to be displaying on Google’s search results. A favicon is a small square image that represents a website in web browser tabs. If you take a look at the top tab bar of your browser right now, I’m sure you’ll see several favicons! Typically, favicons feature a logo, the first letter of the company name or simply an image that reflects the specifics of the website it represents.
You can add a favicon to the online store by navigating to the Theme Editor and selecting Theme Settings. Once that has been selected, you should see the section titled Logo to add a favicon. I took a screenshot from my test store to show you the section I am referring to:
Keep in mind that these images are displayed quite small, so it’s good to keep in mind that the image you use should be readable at small sizes.

Could you let us know when you made this change? In order for Google to update their search results for your online store, they will need to index your store. With that being said, Shopify does not have any control over when Google indexes your online store but you can speed up the process up by Finding and submitting your sitemap.
Once Google has indexed the online store, the search results for the store will be updated.
