I am struggling to add more than 100 variants like this website, this website have more than 100 variants on their product how it can be done I am not able to add more than 100 in my store are there any way?

Shopify imposes a limit of 3 options and 100 variants, which can be bypassed using third-party apps.
However, Shopify is expected to roll out an update increasing the variant limit to 2000, although this feature is not public yet. You can find more details in the documentation here: Winter 2024 Editions
Another approach is to separate variants into new products.
Alternatively, you can use metafields and implement custom code to surpass this limitation.

Product Options: Break down variations into smaller options (size, color) to create more combinations within the 100 limit.

Third-Party Apps: Explore apps like “Product Variants Reloaded” or “Variant Options Unlimited” that can handle large numbers of variants and potentially create custom product pages.

Shopify Support (For Rare Cases): In very specific situations, contact Shopify Support to discuss exceeding the 100 variant limit. However, this is a less likely solution.
Choose the method that best suits your needs while keeping your customer experience clear and user-friendly. Avoid overwhelming them with too many choices.

One approach could be to break down your client’s products into smaller products. Then, leverage the Easify Product Options app to establish cross-product connections among them. This way, when customers browse the product pages, it will appear as though they’re switching between regular Shopify variants, but they’re actually navigating among different products.
Alternatively, if certain options don’t impact inventory, you can isolate them and create custom options using the Easify app. This streamlines the Shopify variants generated, focusing only on options affecting the main product quantity.

A year later and I still cannot add more than 100 variants. That is very odd thing to put a restriction on in a retail setting. Good thing there is a third party app that will resolve my issue (like everything else) I Just have to pay for it. Two years later I’m still waiting for a time clock. But don’t fret! There’s a $20/month app you can pay for that will resolve that problem too.
Shopify Now Supports Up to 2,048 Variants

2,048 variants are the max limit now, still with 3 option limit.
