I’m looking to add life coaching services for clients to book and pay online. I’ve been having trouble with the apps as they are making me use my clothing products?

I think every booking App in Shopify requires using a product. This is because the service typically requires payment and you set that up on the product configuration page in Shopify. You might also have different prices depending on the service so in that case you’d have multiple variants.
E.g. in our app (BookThatApp) we have many merchants who allow booking a 30 minute or 1 hour session and the price changes depending on what session the customer chooses:
