How can I alter the date picker format and field position?

I implemented the date picker code found here : https://shopify.dev/tutorials/customize-theme-add-date-picker-for-delivery-dates

how can I change the format from mm/dd/yyyy to dd/mm/yyyy?

Doesn’t seem to be any documentation on it.

Also how can I move the box field to be the same line at the label?
