Just wanted to find out if there is a way to have one discount code that discounts 3 three products but each product is discounted at a different percentages? Eg. Product 1 = discount 29%; Product 2 = discount 32%; Product 3 = discount 40%. But using one discount?

We understand your requirement but unfortunately, Shopify’s discount code have not yet been supported for situation like this. You must create a separate discount for each product type.
