Is it possible to assign the sales tag on some products and not others? If not, then how can i remove them? Having them assigned to all products seem a bit weird…

When you refer to the sales tag do you mean the flag on your website that indicates that a product is for sale?
Usually, you can mark a product as on sale by inputting a compare-at-price that is higher than the sale price. We have a great video explaining this right here:
A lot of this information is included in our help guide on setting sales. Bear in mind too that you can create discount codes in your store that are a handy marketing ploy for increasing conversions (especially with Christmas on the way!).
