Is there a way to add a tag to an order if it’s to a first time customer…automated that is? Or better yet, add a tag to a new order that shows how many orders they have placed? I know there is a field for this but can’t find it or don’t know how to tell the system to automatically add a tag.

I think you should use a tagging app that tags orders based on customers’ order count.
I suggest you try this All-in-one tagging app called Auto Tags.
It has a workflow in its workflow library “Tag first time a customer places an order”, you can also customize this workflow to tag orders based on customers’ order count like when a customer places 2nd order, 3rd order… or 10th order, and so on.
It also has a workflow in its workflow library like “Tag new customers who have not placed any order” which can be used to tag customers based on their order count.
