How can I avoid tracking inventory for custom finish options?

I am trying to setup a line of products that you choose a size, a finish, and finally a customization with about twenty options. I don’t care about the first two but the last one tracks inventory which I don’t want or need. There are four sizes and two to four finishes. The final part which is customization has about 25 option. Is there a way to do this that the final option doesn’t create all these variants?

So how it works is:

Pick Size: Extra Fine, Fine, Medium, Broad

Pick Finish: Gold Plated, Polish Stainless Steel, 14K Gold

Pick Custom Finish: Here there are about 25 options and have no bearing on inventory as they are hand done after they pick. But this wants to make a separate product for each size, finish, and custom finish. How can I make the third option just a simple pick and choose and not create all the extras on the back end?

Yes, you can use the metafields for that. You can use the select metafield instead of textbox in the video
