I have added the UK market to my Shopify store and I want to change the currency of the checkout so that when people from the UK buy from us will check out with their currency instead of USD bearing in mind that store currency is USD and we have already made some sales.

If you want to change your store currency after the first sale, you need to contact Support team directly and have them change it for you.
With this type of issue, the best bet is to get in touch with the Support team directly to have them check it for you.
You could refer to this link, log in to your store account then type in a topic in the search bar, for example, " change currency " and select Search. On the following page, scroll down to Get Support and click Continue and you’ll be presented with options to contact their Support via chat, email, or schedule a call-back.
