How can I change this default globe icon into my store logo?

Please add your logo to the favicon in the store admin > Sales channels > Online store > Themes > Customize > Theme settings > Logo. After the favicon is added, it may take some time for Google to index and display it on the Google search results.

Ive had the favicon added since I opened my store, but its still not showing up

As it is already updated in here so you will wait a time for google index and display it on google search
