I have noticed some sites have a ‘Shop by Size’ heading so the client can choose all the styles by their size so they don’t have to go through the whole site to find something in their size in stock.
How do I do this please for my site.

You can create a custom field named size and install search and discovery app, which will enable filter option for metafield.

Another option to allow your customers to view the sizes available is to display them on the collection page under the product thumbnail.
