I’m looking for some help in changing the language that appears in the checkout error code below:
I was hoping to make that language more specific, as the store has a 3 jar minimum (they sell jelly/jam). So, I know that the error message is being triggered because I don’t have a shipping rule available for an order that doesn’t meet those requirements, but is it possible to edit that message? Help is appreciated.

You cannot edit platform system shipping error messages such as that like you can a themes wording using locale files or admin settings.
You may be able to edit “Shipping method” to “Shipping method (3 jar minimum)”
Generally you want to solve this BEFORE a customer even gets to the cart.
For the online sales channel through messaging, and theme customizations that add 3 at a time or a pack builder UI, or via bundling.
For multi-channel it can be saner to sell packs then use an automation app to do the inventory sync’ing.
There may be shipping apps using the new checkout-shopify-functions feature that could do “something” but you’d have to dig and experiment.
An alternative workaround is maybe making a very high priced shipping rate with it’s title trying to message about the minimum to get better shipping rates.
