How can I customize product visibility based on customer preferences?

Hello, I have the following challenge:

I need to profile clients (asking them about their preferences) and based on the answers, assign them a profile to allow them to see only some collections and/or products… the idea is that every time When the client logs in, it will “remember” their preferences and show them only the collections and products that match their profile…of course, if they browse anonymously I will show them everything.

Has anyone figured out how to solve it? using apps, tags, segmentation apps…etc?
