How can I customize the Orders Dashboard on my new platform?

I recently migrated my store from a different platform. There is a lot I like about Shopify but I miss my old Orders dashboard. I could add notes into a freeform field on the dashboard page with information regarding shipper to use, delivery date, etc. I could make changes to the shipping cost if the customer wanted to change to a different service. I could also email the customers tracking info, invoice etc right from their order page. Is there any app or another way to make the orders page more customized? I realize it is possible I’m just missing the features I want because I’m still finding my way around the system but I’m hoping someo
