Support clarifies that any checkout changes are considered customizations and are only possible on Shopify Plus (the enterprise tier with checkout customization). I don’t need “Information” and “Payment” pages. I only need the user to be able to leave his email and phone number for communication after adding goods to the cart, and that’s it.
Is it real to make without using code and developer skills?

I don’t wank to customise it. I wan’t only to disable it and send an email with products of a customer to my email, like a submission.

Any changes made to the checkout are considered customizations. You can disable the checkout; however, your customers will not be able to purchase any products from your store. I recommend reaching out to a developer to discuss your checkout changes.
