Is there a way I can have estimate shipping time stated in my checkout / cart? Currently not there and not sure how to include it.

Great question! The best way to display an estimated shipping time in the cart or checkout is in the shipping rate name:
To edit this specific aspect of the shipping settings you would take these steps in the store admin:
Admin > Settings > Shipping and delivery > Shipping > General shipping rates > Manage rates > Rate name
