Our collections are currently set up so that all variants appear as their own product, I have created a new collection and for this one I would like it so that one image is shown and the variants to appear when you select the product.
Any advice on how I can go about setting this up?

To provide some context, you can add variants to an existing product that has more than one option, such as color. I recommend checking out our Adding Variants documentation for more information on these steps.
To successfully achieve this, you can:
Head to Products, from the Shopify admin.
Click the name of the product.
In the Options section, click Add another option.
Enter the option information (i.e Color) in the fields.
Click Save.

I think you misunderstood the problem, I already know how to add variants to my products. I am looking to change the logic within my collections so that one product image is displayed and the remainder of the variants can be viewed on the product page as opposed to how it is currently where all variants are displayed on the collection page. Hope this clears up the confusion.
