After adding a new item to the cart, a popup shows with the options to “Keep Shopping” and “View Cart”.
I want to edit the “Keep Shopping” text but am having trouble finding where to change that.

You can try to find and change that text from your Shopify store admin > Online stores > Themes > Actions > Edit languages > search “Keep shopping”
It looks like it was actually coming from one of the apps. ( Variant Option Product Options )
I followed this and added to the theme.liquid:
