How can I eliminate the shipping option and modify order confirmation messages?

Hello,

I’m looking to remove the shipping option and only offer pick up and delivery. I have shipping turned off but when customers check out under Delivery Method “Ship” is still an option, which is misleading. Also, how do I edit the Order Confirmation message to never reference Shipping, only Pick Up or Delivery?

I have the opposite issue. I want to take Pick up off the checkout page. I have found no way to doing that, have you succeeded?
