How can I expand Advanced Product Options on my website?

Hi All

I have purchased a shopify website with Advanced Product Options installed and it has been well configured and works well. Now I want to add many more categories and sub categories to move the site forward and I need some technical help. I want to create a much bigger menu that can be added to as I grow and actually prefer the sites with a big initial menu with multiple options and sub options directly (as per blurry image, sorry). Any help appreciated.
