How do I create a receipt for a customer, they ordered through my site with pickup and were never able to enter an email address so now they don’t have a receipt for a business purchase. Is there a way I can create one for them?

Did your customer enter in their phone number instead of their email at checkout? If that is the case, they would have been sent a text with an order confirmation link. If they can’t locate the text, you can resend the order confirmation SMS, as shown here:
Alternatively, you can access the order status page (which they can use as a receipt) and send the link to them directly. You can do this by opening the order in the admin and clicking on More Actions > View order status page.
The link would look something like yourstorename.myshopify.com/12345678911/orders/956vm7nzb5c015ce7447b44de23018ff . You can provide this to them in an email or print it out for them.
