I know I can set a send-to adress, but I want to receive emails on my domain that’s registered with another registrar. So that I can communicate with customers.

In order to achieve this, you will need to use a third party email hosting service such as Zoho or Google Workspace. Since your domain is not hosted by Shopify, it will be best for you to reach out to your domain provider for instructions on how to set up email hosting. It usually requires you to add a TXT or meta tag within the DNS settings of your domain.
When your custom email is set up, you can update your Shopify settings with the new email so customers can reach you.
