There are some ways to help you hide sold out products automatically from your store.

The first solution is to use a 3-rd party app. Several third-party apps can help you with managing your store inventory and my recommendation is an app called Nada: Sort & Hide Out-of-Stock.

Another way is to set automatic collection rules to display only products that are in stock if you are using an automatic collection. To set the inventory stock condition follow these steps:

  1. Go to your Shopify store admin > Products > Collections
  2. Select a particular collection, and in the section Conditions click on Add another condition. (If you don’t see Conditions section that means the collection is not automatic, but manual)
  3. From the drop-down select Inventory stock + is greater than + 0
  4. Click on Save and that’s all. The product will no longer be visible in your collection pages (i.e. yourstore.com/ collections)

And you can do this with Flow – free app from Shopify:

You may consider creating a symmetrical flow to automatically publish product when inventory is replenished by using trigger “Product variant is back in stock”. Or may decide to publish manually, just in case.

it means that all product will be hide but i just need the varient to be hide not all the product

Ah, that’s a quite different thing. Will depend on your theme and how many options your products have.
