I have added a FREESHIP code to my site for all orders over $100 for USPS 3 day shipping. When I enter the code at checkout it still gives customers all of the shipping choices to pick from and all for FREE (UPS, Next Day Air, all of then). How to I make it so if they use the FREESHIP code they do not have a choice to choose other shipping options?

You would not be able to remove the other options in this case when a code is used.
You would likely need some custom code solution to accomplish this. You can perhaps contract a Shopify Expert to do this for you.
