Why is it everytime I edit the lay out on one page on the theme editor that all the pages have that same change made to them, once’s linked to a contact me page another to a price list, I looked at the templates and there’s only two, contact us and default page ? Why can I make individual changes to each page on my theme

You can totally create different templates from the theme editor for different pages and then assign your pages to a specific template from your pages settings.
