How can I manually sort products on home and collections page layout?

I thought I could change the layout of the products on my home page and collections page but it’s not letting me do.

I want all white socks only on home landing page and I want the same on my collections tab. I want to be able to sort these manually and thought it was straightforward.

Thank you to the lady that helped before. Her post seemed to have disappeared.

Can someone please help with removing the ‘sort by’ options. I only want old to new as an option, not alphabetical or any others.
