I’m currently using a dawn theme and I want to make my product page layout like below image.
(Showing 2 main photo and thumbnail carousel on the left side)
Also, I would like to know how to add filter by category and colors.
Is it possible to use Search & Discovery filter to look like below?

I have checked both the requirements and yes both are possible. But it need tweaks with changing the a quite lot of code. It is a custom requirement thus the solution can’t be shared here. As a number of files needs to be changed for it. I would recommend you to contact the theme developer or hire a developer at a reasonable rate to help you on it.
