How do I edit the order summary page the customer receives

I would like to remove the Gift Card Section as we do not want to send E gift Cards.

If a client buys a gift card we would like to send them a proper card

You should be able to make edits to order confirmation email that your customers automatically receive by navigating to settings > notifications. This will allow you to make any edits to the templates that are generated by the Shopify store and sent to your customers. I took a screenshot of the section I am referring to from my test store:
